Mint Tea Cous Cous

3 Mint Tea Bags
1/2 cup boiling water
1 tbsp olive oil
1 med. yellow onion, chopped fine
1 clove garlic, minced fine
1 large tomato, seeded and chopped fine
2 tbsp. black raisins or currants (optional)
1/2 cup cooked or canned chick peas
1/2 teas. cinnamon
1/4 teas. saffron
1 tsp. salt
2 cups cooked cous cous (israeli style optional)

Steep teabags in boiling water and set aside. saute onions and garlic over medium heat until lightly golden and add tomato,raisins, chickpeas,cinnamon,saffron, and salt. Cook 5 minutes.Add strained tea and simmer 3 more minutes. add mixture with cous cous and serve. I like this one at room temp as much as warm.
