So last night I was bored and decided I wanted chocolate, so I decided to bake something easy and delicious! I searched through my cabinets in my kitchen and decided on brownies. I rarely make brownies, but I found a recipe, edited it to my liking and went to work! I also learned that due to the fact that I don’t make brownies often, that I lacked a brownie pan :/ So I opened up a Christmas gift my parents got me and made my brownies in tasting ramequins, so these aren’t your traditional brownies J The recipe below is once again vegan and reduced sugar. I used organic white flour and used erythritol again to cut the sugar in half! These came out fantastic, they are moist in the middle and slightly hard on the outside. I topped this wonderful success with icing and powdered sugar, I also suggest throwing some walnuts in there or caramel on top, both are great with brownies!
Hope you enjoy <3 Vegan Brownie 2 Cups of All Purpose Flour ( I used Whole Foods Organic in the bulk section) 1 Cup of Organic Sugar 1 Cup of Erythritol (found at any health food store) ¾ Cup of Unsweetened Cocoa Powder 1 Teaspoon of Baking Powder 1 Teaspoon of Salt 1 Cup of Water 1 Cup of Vegetable Oil 1 Teaspoon of Vanilla 1. Set oven to 350 degrees 2. In a large bowl mix flour, sugar, cocoa powder, baking powder, and salt.
3. Then add water, vegetable oil , and vanilla.
4. Mix until well blended ( Batter will be thick and shiny)
5. If using a normal brownie pan, spread into pan and bake for 25 to 30 minutes
The brownies in the ramequins took about 15- 20 minutes and I made mini cupcake versions that took about 12 minutes.
